I have been SOOOO M.I.A. for, like, the last 2 weeks. I haven’t been on social media, have barely worked on the blog or touched a new recipe. I’m still cooking, though, so some things will never change. It just happens to consist of easy Smoky Yogurt-Marinated Chicken and Quinoa & Chickpea Tabbouleh Salad or Miso Chicken Stir Fry because sometimes simple is best.
Our new home has taken total priority these few weeks. Josh and I moved into our first ever home the first weekend in July; it’s been non-stop ever since. We spent the first weekend moving, organizing, painting the master bedroom, hanging curtains, and making an obscene amount of trips to Lowe’s and Target. (And a HUGE thanks to my amazing family for driving 3 hours to help us!)
In the matter of two days, we spent a couple hundred dollars in paint and supplies, another few hundred on a lawn mower, and a living room rug (because HELLO SALE!). Oh, yeah, and there’s a couch on the way, too…!
We’ve been doing something every weekend since the move, so I’ve definitely fallen off the blog wagon a little bit!
But don’t worry!
I’m definitely still in the kitchen 24/7. And now that we own a home, we’re also grilling again! In case you missed it, our previous apartment complex’s fire code banned us from grilling. But now, Josh is outside every single night with a pair of tongs, helping me with dinner. Now these Turkey Burgers with Apple Fennel Slaw are alllllll over the menu!
Turkey burgers have grown on me in the last couple years. I grew up on venison (if you need a great venison recipe, try out this Slow Cooker Venison Chili!) and my family rarely bought beef. Our burgers were always venison, so it was difficult for me to change! But, along came the turkey craze. I was already using ground turkey in homemade pasta sauce, lasagna, stuffed peppers, tacos, etc. but it really took me a while to jump on the burger bandwagon.
Well, not anymore!
This recipe starts with lightly seasoned lean ground turkey (you can use extra lean, but they might be quite dry. Try a mix of lean and extra lean to keep some of the flavor and juices!). Really, we’re basically just using salt and pepper because we’ll let the Apple Fennel Slaw do the talking!
These Burgers with Apple Fennel Slaw are grilled (or pan-seared) to perfection; then just before they’re done, we’ll top them with creamy Gruyere cheese and let it melt down the sides. Delish. If you can’t find Gruyere, organic Swiss is a good substitute. Other options are Gorgonzola (I didn’t use it here only because my husband hates it!), or shaved Parmesan or Pecorino.
Thennnnnn while the burgers grill away, make the Apple Fennel Slaw (aka the BEST PART!).
Fennel has such a beautiful, light, licorice-like flavor; it pairs perfectly with crisp apple, red cabbage, red onion, a little celery salt, and a super simple creamy Greek yogurt dressing. Don’t let fennel intimidate you: its flavor is light but so necessary in this slaw! Trust me: I despite licorice, but fennel is the best thing ever. Feel free to use whatever apples you have on hand; I prefer red, but crisp green would be fabulous!
The Greek yogurt slaw dressing is healthy and super simple. I always reach for whole milk yogurt when cooking or baking because it lends so much creaminess, but fat free or 2% would also work.
And, of course, pile that slaw topping on HIGH because it’s so, so, so gooood! Like eat-me-straight-outta-the-bowl good. If you don’t use it all for your burgers, do yourself a favor and stuff it inside wraps, mix it into salads, eat it with a spoon…
And THEN. Microgreens. Aren’t they so cute?!
I had the hardest time finding microgreens anywhere near me. It turns out the only vendor is a local farmer and I just so happened to stumble across them at the market last weekend!
Okay, okay, okay.

Healthy and simple turkey burgers are topped with a crisp, fresh Apple Fennel Slaw and melted Gruyere cheese for an amazing summer dinner!
- 1 lb. lean ground turkey
- 1 clove garlic, minced
- 1 tsp minced dried onion
- 1/2 tsp salt
- 1/4 tsp pepper
- 2-3 c. shredded red cabbage
- 1 large apple, julienned
- 1 bulb fennel, white part only, thinly sliced
- 1/4 c. thinly sliced red onion
- 1/4 c. Greek yogurt
- 2 tsp lemon juice
- 1 tsp honey
- 1/2 tsp celery salt
- Salt and pepper, to taste
- 4-6 oz. Gruyere cheese
- 4 Whole wheat hambuger buns
- 1 head butter lettuce
- Microgreens, for serving
Preheat a grill to medium-high heat.
In a medium bowl, mix together the ground turkey, garlic, minced onion, salt, and pepper. Shape into 4 patties. Grill 5-6 minutes per side or until completely cooked through. Just before the patties are done, top with Gruyere cheese and allow to melt. Remove from heat.
Meanwhile, make the slaw. In a large bowl, stir together the cabbage, apple, fennel, onion, Greek yogurt, lemon juice, honey, and celery salt. Season with salt and pepper.
Serve each burger on a whole wheat bun with Apple Fennel Slaw, lettuce, and microgreens. Store leftover slaw in the refrigerator.
