I could eat this Slow Cooker Lentil Stew on repeat all day every day. It’s that good. It’s the perfect cozy-night-in stew and barely requires any effort! It’s a win-win.
I get a TON of use out of my slow cooker during the winter (like these Hoisin Chicken Sliders with Sesame Slaw and Salsa Verde Chicken Tacos!). Often the last thing I want to do when I get home from work is cook. I’m frozen to the bone and just ready for a hot, comforting dinner with zero effort involved. I use my slow cooker at least 2-3 days per week when the weather cools down. Hearty chili, nourishing noodle soups, shredded peanut chicken, comforting curry… the list goes on and on. But my favorite thing lately has been this Slow Cooker Lentil Stew!
Not only is this stew thick, chunky, and comforting, it’s also packed with vitamins, minerals, and fiber. I started with Village Harvest’s Organic Protein Grain Blend, which is a blend of brown jasmine rice, lentils, and red quinoa. This is simply the best blend!

This Slow Cooker Lentil Stew starts with sauteed onions, carrot, and celery, like all good stews. It’s then transferred to the slow cooker. The Protein Blend of brown jasmine rice, lentils, and quinoa is added along with diced tomatoes, vegetable stock, sliced chicken sausage, and kale.
Kale is a fantastic source of nutrients. One serving has over 1000% of your daily Vitamin K needs, 100% Vitamin A, 70% Vitamin C, and 10% of your daily fiber requirements. It’s also a powerful source of B-vitamins, manganese, calcium, and potassium.
Just one serving of the Protein Blend boasts 5 grams of fiber, 210 mg of potassium, and 2 mg of iron. And this entire stew has almost no sugar (except for what is naturally occurring).

This Slow Cooker Lentil Stew with Chicken Sausage & Kale is seriously the best meal to cozy up to on a chilly winter night. Don’t forget the dipping bread (the best part!)!
- 1 Tbsp olive oil
- 1 small onion, chopped
- 1 c. carrots, chopped
- 4 cloves garlic, minced
- 1 1/2 c Village Harvest Organic Protein Blend
- 4 links chicken sausage, sliced (omit if vegetarian/vegan)
- 3 c. kale, coarsely chopped
- 28 oz. crushed tomatoes
- 4 c. vegetable stock
- 1/2 c. water
- 1 1/2 tsp cumin
- 1 tsp dried oregano
- 1 tsp salt
- Freshly shaved Parmesan cheese, for serving
- Multigrain bread, for serving
Heat a large nonstick skillet over medium-high heat. Add olive oil; swirl to coat. Add the onion and carrot, stirring occasionally, 5-7 minutes or until carrots are tender, yet still firm. Stir in the garlic for 30 seconds.
Remove from heat and transfer the onion mixture to the bottom of a slow cooker. Add the Protein Blend, chicken sausage (if using), kale, crushed tomatoes, vegetable broth, water, cumin, oregano, and salt. Cover the slow cooker and cook on low for 6-8 hours. If the stew becomes a bit dry, add more broth or water, 1/2 c. at a time, until desired consistency is reached. Taste, adjust seasonings, and serve topped with shaved Parmesan and multigrain bread.
