Over the last week, Josh and I have sorted (read purged) through our closets, donated a TON of stuff, and deep-cleaned the apartment. We’ve scrubbed, vacuumed, de-cluttered, and I’m feeling so much more at peace. It’s amazing what a good deep clean will do for the soul.
The other thing that’s been in full-on spring mode is my kitchen. It’s produced a Vegan Lemon Tart, Spring Pesto Minestrone, and a heck of a lot of salads (AKA the most delicious Bagel & Lox Salad – with Everything Spice Croutons!).

And I cannot get over this Citrus Tahini Dressing! I’m going to have to start putting it on everything. Literally, everything. The orange flavor is bold and bright, but paired with savory umami tahini? It’s out of this world!! It’s the perfect little kick for this salad – not overpowering, but definitely packs flavor! Besides, orange and cranberry have always been the best flavor combo.
I’m loving how light and refreshing this salad feels for spring. I’ve been craving broccoli and this salad is just feeling sooo right.

Broccoli and chickpeas are incredibly high in fiber, both wonderful for digestive health. I’m a total sucker for anything with chickpeas. Aren’t they just the best?!
The cranberries give just a little bit of sweetness, without adding any extra sugar to the salad. Sunflower seeds are a wonderful source of Vitamin E, magnesium, selenium, and folic acid. Vitamin E and folate help reduce free radical formation while selenium supports thyroid health. All of these make sunflower seeds a wonderful antioxidant!
Feta cheese lends a little bit of protein, but we all know that I can’t make anything without adding cheese. Especially salads!
I’m a firm believer that the best salads contain a little bit of everything: crunch, creaminess, salt, and sweet. Texture everywhere.

Fresh Broccoli Cranberry Salad is the perfect blend of savory, crunchy, and sweet. Tossed with a Citrus Tahini Vinaigrette, this is the ultimate salad!
- 2 heads broccoli, chopped into 1/2" pieces
- 1 (14-oz.) can chickpeas, drained and rinsed
- 2/3 c. feta cheese
- 1/3 c. Graceland Fruit No Sugar Added Dried Cranberries
- 1/3 c. sliced almonds
- 1/4 c. sunflower seeds
- 1/3 c. fresh-squeezed orange juice
- 1/4 c. tahini, well-stirred
- 1 clove minced garlic
- 1 Tbsp orange zest
- 1 Tbsp honey
- 1 Tbsp apple cider vinegar
- 1 Tbsp extra virgin olive oil
- 1/4 tsp salt
Combine the broccoli florets, chickpeas, feta cheese, dried cranberries, almonds, and sunflower seeds together in a large bowl.
To make the dressing, combine all dressing ingredients in a bowl or glass jar. Whisk (or shake) vigorously until well-incorporated.
Pour the dressing over the salad. You may not use all of it. In total, I used about 3/4 of the dressing. Toss and mix to combine.
Serve with more feta cheese sprinkled on top! Refrigerate leftovers.
*Note: this recipe can be made a day in advance and refrigerated until ready to serve.
